In 2021 we added several raised fruit and vegetable gardens that now wind their way through the property. A variety of crops including eggplant, chili, pumpkin, watermelon, and cassava; along with an assortment of tropical fruits, are now being successfully grown. During the pandemic 100% of the yield has gone to the staff and their families, with a concerted effort to grow foods that are familiar to them and can support their ongoing health during these difficult times. Plans are in place for the new food supply to contribute to the menu at the resort’s restaurant wherever possible.
